I've got a couple of clients running shopping ads via Google Merchant Center/Ads. The shopping URLs are showing up in google search console. For example (Domain and Product Name redacted for privacy): https://DOMAIN/products/PRODUCT-NAME?variant=35484110028968&currency=USD&utm_medium=product_sync&utm_source=google&utm_content=sag_organic&utm_campaign=sag_organic
  1. Why is Google crawling and indexing these? They don't crawl and index landing pages for paid search ads (as far as I know)
  2. I've got canonical set-up which will help I suppose but there is another way to get GSC to ignore these sorts of URLs?

Google does not take into account paid search ads and what page those land on and therefore not index. That's not at all true. They will only not index a page like that one only if you tell them to not index. Or Google will ignore a landing page if you left it orphaned. But it won't have anything to do with them determining it's a paid advertising landing page.
